How to smoke a ham
Most of the hams you will buy in the major groceries stores are going to be pre-cooked, pre-smoked hams. They are typically the kind that say you can slice and serve them immediately, and they are also known as "City Hams".
Since these hams are already fully cooked and smoked, all you really need to do is re-heat the ham in order to serve it. We do it slowly and on a Traeger wood-pellet grill so it can pick up even more rich smokey flavors, and stay tender and juicy until it is time to slice and serve.
The maple champagne glaze makes things just a little sweet and is the perfect sauce to serve alongside the ham once it is heated through and sliced.
Since the hams we'd be using are already smoked once during the cooking process, what we are making here is actually a double-smoked ham.

How long should you smoke a ham?
How long you need to cook smoked ham on a bbq depends first on what type of ham you are cooking. If you are cooking a fresh or country ham, these directions won't apply.
To double-smoke a city ham, just start your smoker or pellet-grill and place your ham on it. I like to cook mine in a pan with about a cup of cooking liquid inside. I used prosecco, but have also used hard cider and regular apple juice as well, very successfully.

What side dishes go with twice-smoked ham?
My classic scalloped potatoes are the perfect side for this easy double-smoked ham recipe. I'd also suggest some corncakes and a crisp green salad with Greek Freak Salad Dressing. Also, these grilled funeral potatoes. Oh.My.Goshhhhh.

What can I make with leftover smoked ham?
Make some scalloped potato and ham casserole, whip up a ham and egg breakfast bake, or chop it up and use it as a topping on my Three-Meat Pizza.
It is also really great sliced and served with fresh milk rolls.
What about Easter desserts?
I have lots of options for you for your Easter dessert table! One of my personal favorites is my Cherry Cheesecake Fluff Pie. It is no-bake and extraordinary. You can make it with any kind of fruit or fruit topping you'd like, too.
Another great option if you want to do some baking are my Ovaltine Cupcakes. This is my favorite chocolate cake and frosting recipe!
Love cheesecake, but don't want the no-bake variety? Did you know you can make the most PERFECT cheesecake in an Instant Pot? Look.at.this. Strawberry Instant Pot Cheesecake!
It has a strawberry sour cream sauce on top and then HEAPS of fresh sliced strawberries too.
Also, you can't neglect my Traeger Apple Crisp. You already have the T fired up for your ham, so why not do double duty and have this awesome apple crisp ready to throw on once the ham comes off?

Prep Time 15 minutes
Cook Time 2 hours 30 minutes
Total Time 2 hours 45 minutes
Ingredients
- 1 large bone-in pre-cooked ham
Glaze
- 1/2 cup maple syrup
- 3/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 3/4 cup prosecco or hard apple cider
Instructions
- Fire up your grill according to manufacturer directions, and preheat to 325°.
- Score the top of your ham in a cross-cross pattern, and place into a large baking pan that has been lined with foil.
- Place the pan, uncovered, into the preheated grill, and cook for 1 hour.
- While the ham is cooking, combine all of the glaze ingredients in a small saucepan over medium heat, and simmer until the sugar is fully dissolved. Remove from heat and set aside.
- After the ham has been on the Traeger for an hour, brush it liberally with about half of the glaze.
- Cook for an additional 30 minutes, and then brush with glaze again. Cook another 15-20 minutes, or until the ham reaches at least 135°.
- Turn the grill to the SMOKE setting, or the lowest temperature before the smoke setting, and smoke the ham for 20-25 minutes.
- Remove from the grill and let rest for 10 minutes.
- Slice and serve with any remaining glaze that didn't get painted onto the ham.
Notes
- You can substitute apple juice or apple cider for the prosecco if you don't have any.
